CULTURE: Integrated cultivation (no herbicides, ecological tillage, manual leaf removal, green harvesting), meeting all the requirements for HVE3 (High Environmental Value) certification obtained in 2019.
VINIFICATION :
After manual harvesting and careful sorting (using an optical eye machine), the grapes are transferred to concrete vats at a gentle temperature for fermentation in temperature-controlled vats. During the first few days, the wine is pumped over two or three times a day to extract the best tannins. The wine is then aged for 18 months in French oak barrels (1/3 new barrels, 1/3 one-year-old barrels and 1/3 two-year-old barrels).
CLOS des MENUTS is a round, powerful wine for laying down, with subtle tannins. Its deep colour is the result of well-controlled extraction. A lovely nose of ripe grapes wrapped in an elegant woodiness with hints of toast and vanilla. These impressions are confirmed on the palate.

What is it?
The HVE label is an initiative of the French Ministry of Agriculture, based on indicators measuring the environmental performance of winegrowing and farming operations. It is based on four themes: the preservation of biodiversity (fauna and flora), phytosanitary strategy, fertilisation management and irrigation management.
